AMISH MACARONI SALAD

1 lb Macaroni or baby sea shells
1/2 c Chopped celery
1/2 c Carrots, finely grated
1/4 c Onions, finely chopped
6 Hard cooked Eggs, sliced
Paprika
Cook macaroni as directed; drain and cool.
Set aside 1 hard cooked egg; then stir together gently the cooked macaroni,
celery, carrots, Onion and the remaining eggs.
DRESSING:
1 pint Miracle Whip
1/4 cup Vinegar
3/4 cup Sugar
2 Tablespoons prepared mustard
Blend together; then fold into macaroni salad mixture.
Garnish with the 1 hard cooked egg and paprika

BAKED CHICKEN SALAD

Oven 400 - Buttered 9x13 pan
Assemble the night before baking and refrigerate:
One whole chicken, stewed, meat taken from bones and chopped or
(2 6oz cans of chunk chicken)
2 c diced celery
1 small onion minced
2 cans cream of chicken soup
1 1/3 c mayonnaise
2 Tbsp. fresh lemon juice
1/2 tsp salt
1/2 tsp pepper
6 hard cooked eggs, thinly sliced
1 c slivered almonds
1 large can chow mein noodles
Optional - box of frozen peas and/or 1 c. shredded cheddar cheese
Mix all ingredients except chow mein noodles (and cheese if using) and
pour into greased baking pan. Cover and refrigerate overnight if
desired. When ready to bake preheat oven to 400 and sprinkle chow mein
noodles (and cheese) over the top. Bake 25-30 minutes if cold, 15-20
minutes if baking immediately after assembly.
