Apple, & Veggie Layered Casserole

In a casserole dish lined with parchment paper, place ½ celery root down, sprinkle with salt and pepper and basil. Dot with ½ the butter. Place ½ the onion. Top with all of the apple slices and the rest of the basil. Dot again with butter and sprinkle with salt and pepper. Top with remaining celery root and onions. Drizzle with olive oil. Cover with aluminum foil.
Prepare barbecue for indirect grilling. Preheat grill to 300F/150C. Place casserole dish on the side of the barbecue that has no heat. Bake the casserole, using indirect heat, for 40 minutes. Remove foil and crisp top for 10 minutes. Remove from grill and allow to cool slightly before slicing into desired wedges.
