Banana Nut Bread
Ingredients:
4 small (4") or 3 large (6") bananas. Use a combination of off and ripe bananas
2 eggs
1 cup of sugar
1/2 cup of margerine and vegetable oil
2 cups of plain flour
pinch of salt
teaspoon of baking soda
about 110 gms of nuts - walnut or pecan
Method:
Put two eggs in the blender
Peel bananas and take off the ends and all strings
Heat margerine and oil so that the margerine melts
Cover pan with tin foil
Preheat the oven to 175 degrees
Put the bananas in the blender
Blend bananas and eggs
Add the sugar
Add the margerine so that the sugar melts
In mixing bowl, put the flour, the baking soda and the salt and stir
Add the mix to the flour and stir
When the flour is completely coated, add the nuts
Stir until the nuts are coated
Put the mix into the pan - fill pan till half or 3/4 full as it will double when it rises
Put in oven for 45 minutes if you are using one big pan, or 35 if you are making two small ones
Baking soda sticks to the sides of the bowl, so scrape it off
The oil is what makes the bread moist
The foil means you don't have to wash the pan
