Celeriac and Potato Gratin
Prep and cook time: 1 to 2 hours
Serves: 6-8
Ingredients
1kg potatoes
1 large celeriac
1 onion
Sea salt and freshly ground black pepper
2 cloves garlic, peeled and finely chopped
125g Cheddar cheese, to taste
568ml carton double cream
Handful flat leaf parsley, roughly chopped
Method
Preheat the oven 200°C, 400°F, Gas Mark 6.
Peel the potatoes and celeriac and slice as you like but about 1cm thick, finely slice the onion. Place into an earthenware type-baking dish. Season generously. Add in the garlic, 3/4 of the cheese and cream. With a spoon or your hand move everything around to mix all the flavours. Sprinkle over the extra cheese and chopped parsley and bake in the preheated oven for 40-50 minutes.
I like to keep it in the dish and whack it in
the middle of the table and tuck in.
