6 cups of hickory wood chips

Baby Back Ribs:
3 pounds baby back ribs or one side (1.5kg)
1 tablespoon olive oil (15ml)
salt and pepper to taste

Spare Ribs:
3 -4 pounds spare ribs (1.5kg) or one side
1 tablespoon olive oil (15ml)
salt and pepper to taste



Prepare 2 smoke pouches. Place 4 cups (1 liter) of wood chips into a bowl of cold water to soak for 1 hour. Reserve 2 cups of dry wood chips.
